This scene has some bubbly that we couldn't catch the name of, and it's used for making Mimosas. Looks like the bottle says "Cham" on the label, so we're guessing it's real Champagne. When you make a mimosa, you want to use decent quality bubbly so it doesn't taste bad, but you don't need to use expensive stuff either - the orange juice will just hide all the complexity. Looks like they're making it the right way here: the best mimosa is about 1/3 orange juice poured into the glass followed by 2/3 sparkling wine. Spanish Cava works great as your bubbly and is often much cheaper than Champagne.

Tom Stickler brings out a bottle and says, "You know your Champagnes, Michael? Bollinger Blanc de Noirs. It's my 'new friend' Champagne." Clearly Stickler doesn't know anything about Champagne. Yes, the bottle he's holding is Bollinger, but it's not the very expensive and very rare Blanc de Noirs - it's the standard non-vintage Bollinger Brut Special Cuvee. How do we know? We get a good look at the bottle: white label, topped with a gold and orange capsule. The capsule clearly says Bollinger, but their Blanc de Noirs has a black label and a black capsule. Also, Stickler slaughters the pronunciation. Still, Bollinger Special Cuvee is great stuff!
And he's not very good at pouring. That's way too much foam!
