Assistant: Dear Mike, Help! I can't pour a glass of wine to save my life. It seems simple enough, but every time I pour a drink wine ends up dripping down the neck of the bottle. I've got wine stains everywhere - on my sleeves, on the tablecloth. Please help me make it stop.
Mike: That does sound like a problem. A good start would be to stop wearing white shirts when you're pouring red wine.
Okay, let's see the rest of your setup.
Oooh. This isn't working at all, is it? Let me help.
Since you're the one pouring the wine, it's your job to make sure the bottle's up to snuff. Pour some in your glass first. This way, any little pieces of cork that may have broken free end up in your glass so your date doesn't have to deal with them.
Next, give the wine a good swirl. This mixes the air and the wine, and really brings out the aromas. Go ahead and take a sniff. Don't be afraid to stick your nose way down in there. Do this right and no one will laugh at you.
Next, take a sip. Mmm. Swish it around in your mouth for a bit, look thoughtful, and if it tastes good, make a nice "yum" sound and pour some for your date.
To prevent drips, twist the bottle as you're pulling away from the glass. Some drips are inevitable, so it's never a bad idea to have a napkin on hand.
After you've poured for everybody else, come back and fill your own glass.
Remember, drinking wine is not a contest, so you don't need to fill the glass to the top. Just about 5 ounces or so; enough to get several good drinks before you have to refill. This allows the wine and the oxygen to mix in the glass, which makes it smell, and taste, quite a bit better.
